We exclusively source all of our ingredients from Kashmir and channel all six Kashmiri seasons into our menu. We spend a painstaking amount of time and effort to ensure zero compromises on the quality of our produce and ingredients. So much of it is a full family effort, across over 3000 kilometres.
Praan (the wild Kashmiri shallot) is pretty much the life of Wazwan. This one ingredient has the capacity to make our break how the food tastes because it forms the base of all of our gravies (yes, no onion or tomatoes). Our food is also exclusively cooked in ghee.
